Flourless Chocolate cake

 

Ingredients:

- 3 Whole eggs
- 20gr. cocoa powder
- 60 gr Stevia (Natvia for baking)
- 100gr plain yogurt
- 75gr Almond meal
- 25gr Gluten flour
- 1 tbsp baking powder
- 70gr Macadamia oil
- 1 tsp vanilla essence (optional)

Method:

- pre-heat oven to 170'
- put all ingredients into TM bowl: speed4, 1min.
- Increase speed to 5 for 2min.
- Grease a 18/20cm round baking tray
- pour mixture into the tray
- cook in pre-heated oven for 60min.(leave temperature at 170')

      Yes, Greek yoghurt the one with the lower percentage of sugar you can find.
      If made at home is even better.

  2. Gluten flour? Doesn't that make the cake have flour and hence not flourless?

      Thanks for your feedback.
      You are right I should have named it: 'almost flourless' but considering the quantity of it, it is basically absent.

      However, gluten flour is treated to have wheat bran and starch removed which makes it lower in carbs and much higher in protein.

      The reason why it gets added into the recipe is just to give stickiness and sponginess to the dough.

      If you are gluten intolerant though or really want a flourless cake recipe, there are plenty on the internet to use with TM which uses canned beans. Most of them have red kidney beans as main ingredient but I replaced them with cannellini beans (reason: lighter in flavour than the red kidney beans). Just make sure to rinse them very well (whatever beans you decide to use), until the white foam under running water doesn't form anymore (which means you have removed the added sugar used as a preservative).

      I have tried it and it is delicious and no one can believe it is a flourless cake make with beans. ;)
