Mayonnaise

Ingredients for a serve for 4:
- 1 egg yolk (at room temperature and separated)
- 1/4 cup avocado oil or a cold press olive oil for a lighter flavour
- 1 tbsp lemon juice
- Salt to taste
- Pinch of cayenna (optional)

Tools: Butterfly

Method:
Insert butterfly. Place egg yolk, salt and lemon TM bowl and mix for 1 minute on speed 4.
With blades rotating on speed 4 and MC in place, slowly drizzle the oil onto the lid.
Add oil at a steady pace - not too slowly or quickly.

Tips:
Once thickened you can add the egg white (optional). Mix for 10 seconds on speed 4.
